Spicy Sweetcorn Fritter, Tomato, Avocado and a Fried Egg
30 Min Serves 2


  • 1 can sweetcorn
  • 1/2 tsp cumin
  • 1/2 tsp chilli powder
  • 2 tbsp plain or gram flour for gluten-free
  • Small bunch coriander
  • 1 tbsp olive oil
  • 1/2 avocado
  • 3-4 ripe tomatoes
  • 2 eggs
  • 1/2 juice of 1 lime


  • Garnish with a little sliced chilli and spring onion


  1. 01. First drain the sweetcorn, add spices, finely chopped coriander including stalks, flour and egg then mix well. Add a little olive oil if mix is too dry then season
  2. 02. Make a small pancake out of the fritter mix and gently fry in a little olive oil
  3. 03. Cut and slice half a avocado and squeeze lime over the fritter
  4. 04. Randomly cut up tomatoes, add a dash of olive oil and season
  5. 05. After 3-4 mins flip the fritter over
  6. 06. Now fry an egg. Pimp up your egg up by adding some more spice to it, we've added sumac and black pepper but a sprinkle of any will do
  7. 07. Finally, put the fritter on a plate with the tomato, avocado and fried egg on top. Garnish with a little chilli, spring onion and coriander leaves
