Buckwheat Pancake Cones with Sauté Potatoes, Smoked Bacon & Gruyere Cheese

  • 250g buckwheat flour
  • 600ml milk
  • 9 medium eggs
  • 20g ground nutmeg
  • pinch of salt
  • pinch of black pepper
  • 6 tbsp natural yoghurt
  • 30g smoked bacon
  • 10g gruyère cheese
  • 150g medium potatoes
  • 1 large onion


  1. 01. Mix all wet ingredients together, beat in buckwheat flour and season. Cook off a small amount to test seasoning
  2. 02. Cook the new potatoes until just ready. Remove from the heat and cut into quarters
  3. 03. Cut the bacon into pieces and start to fry over a high heat. Add the new potatoes and start to colour
  4. 04. Add the new potatoes and start to colour
  5. 05. Peel and finely slice the onion and add to the frying pan
  6. 06. Cook until all the ingredients are all golden.
  7. 07. Remove from the heat when ready. Add a little butter and place your batter into the pan to make your pancake
  8. 08. Flip the pancake to cook on both sides. Remove from the heat and fold the pancake in half
  9. 09. Place the new potato mix on one side and grate your gruyere over the top of the potatoes
  10. 10. Fold over the other half of the pancake to make your cone. Place back on a low heat, gently warm on both sides
  11. 11. Slide onto a plate and enjoy!
